The meat is poached at low temperature in olive oil for several hours.
This is free run duck from Yarrow Meadows in Yarrow, BC. The farm is a third generation family run farm.
The animals are raised antibiotic and hormone free.
Heating instructions:
Pre-heat oven to 400F and heat duck for 15 minutes. Alternatively put into a skillet and crisp the skin for 3-4 minutes until hot.
Ingredients: Certified organic duck, duck fat.

Duck confit isn't something I would attempt to do myself as there is quite an art to it (so I understand). This couldn't have been easier to prepare and tasted amazing - comparable to duck I have had in the South of France where the dish is quite famous. Worth the price for a special occasion. Very rich! Only one portion per person for sure.
