The secret to a great pate is a fine chinois, so the pate is smooth and creamy. Chef Allen makes a wonderful duck liver pate using the following ingredients:
Free Range Duck Liver (antibiotic and hormone free), organic eggs, organic butter, port wine, madeira, Cognac, shallots, thyme, sea salt, black pepper, prague powder.
